ABOUT THIS DISH

Biryani has an uncertain origin, some authors indicate its possible Persian origin due to the fact that the name of the dish comes from the Persian beryān which means “fried before cooking”. It is very possible that it made a tour of Afghanistan before it reached North India passing perhaps through the valley of the Thar. 

Other authors mention that it may have a connection with the Turkish pilav. The dish considered ideal for the higher classes, during the Mughal Empire was disseminated and could be available for the lower classes. At present it is a dish closely linked to the Muslim populations in India and Bangladesh.

INGREDIENTS

•1 kg mutton (with bones)

•1/2 kg basmati rice

•250 gr onion (250gr fried)

•25 gr Biriyani masala

•1/2 kg potatoes

•25 gr garlic

•25 gr ginger

•1 lemon

•250 ml oil

•20 gr green chilli

•100 gr yogurt

•20 gr red chilli poder 

  • • 5 gr turmeric poder 
  • • 20 gr chicken powder 
  • • 10 gr mint

• 20 gr fresh coriander 

• 100 gr dry grapes 

• 100 gr cashew nuts

Zehadul Hasan Vinod is a chef from Bangladesh. Graduated from National Hotel & Tourism Training Institute, Bangladesh (NHTTI), Zehadul made his internship at Radisson Blu Dhaka Water Garden, the highest ranked hotel of Bangladesh.

He has experienced working in President House of Bangladesh. In 2018 he was the only representative of Bangladesh in Young Chef Olympiad (YCO, World Biggest Culinary Competition), organized by IIHM (In- dia) and supported by IHC (UK).

In 2019-2020, Zehadul was mentor for Team Turkey in YCO. During this time he worked with TCA Turkish Culinary Academy as an international marketing representative and as a Head of Asian Cuisine.

He also works in all special Programs in Bangladesh High Commission (Ankara) as an Executive Chef. Currently, Zehadul is chef at Silver Spoon Ankara, specialized in cooking homemade Asian food to delivery.
