SHOM Online Cooking Class - Meet the chef - Yalçın Inam
Turkish Chef Yalçın Inam will prepare the common food of Caucasian people, Hangel or commonly called Hingel, Chinkalı, Xhinkalı, Hengel.

ABOUT THIS DISH
As a common food of Caucasian people, Hangel is called different names. It is more commonly called Hingel, Chinkalı, Xhinkalı, Hengel.
Along with Caucasian migration, this meal expanded to the different provinces of Turkey.
It is usually prepared in Artvin and its surroundings, as Ardahan, Sivas, Eastern Black Sea, Erzurum and Kars.
INGREDIENTS
- 600 gr flour
- Salt
- 1 egg
- 100ml water
- 2lt water
- * 10gr salt
- *20ml olive oil
- 300 gr Yogurt
- 3 garlic cloves
- 1 medium dried onion
- 100ml sunflower oil or olive oil
- 50 gr. butter
ESSENTIALS TOOLS
- Stewpot
- Mixing bowl Plate
- A suitable bench to roll dough.
- Soute pan
- Cutting board
- knife Rolling pin
Graduated from Sakarya University Tourism and Hotel Managment. Yalçın olso studied at the Culi- nary Arts Academy Professional Cooking Department. He started his first Job at the age of 18 in the kitchen of Queen Cafe, wich he ran himself in Sakarya.
When he returned to Istanbul in 2009, Yalçın took part in the founding team of the German origin “Nordsee Istanbul” restaurant and became responsible for the kitchen.
At the invitation of Massimo Bottura, the winner of TheWorlds50Best list and 3 Michelin starred chef, he attended the “Al Meni 2015” festival, one of the world’s largest gastromy festivals, and explained Anatolian Cuisine.
Currently, he is working as the technicel consultant of the project “Kitchen of Hope” , implemented by the United Nations World Food Programme. Yalcın is one of the Founders of Kolektif Chefs and Yeic Horanta.
