ABOUT THIS DISH

Paella, a dish named after the pot in which its prepared, are very traditional rice recipes in Spain, the most famous being the

Valencian Paella, which is prepared with rab- bit and chicken.

In ancient times this dish was prepared by the humble and peasant communities of Valen- cia, who used the ingredients that were most accessible to them. Nowadays, paella is one of the iconic dishes of Spanish cuisine and dif- ferent versions of it have been created. Paella is quite well known internationally as well.

In Dominican Republic, paella is prepared al- most exclusively with seafood, which makes it an expensive dish and is often served in spe- cial gatherings with friends and loved ones.

The paella that we are going to prepare in this class is a personalized version of Alicia in relation to the traditional Spanish recipe.

INGREDIENTS (4 persons)

  • 300 gr. short-grain rice 
  • 150 gr. fish fillet (reserve fish bones and heat for the  fish stock) 
  • 8 medium-big shrimps (half of them cleaned head and skin reserved) 
  • 1 medium squids 
  • 150 gr clams-mussels 
  • 150 gr. octopus 
  • 1 medium-size onion, diced

2 garlic cloves, diced 3 ripes tomatoes, diced 1 small branch of parsley 1 small branch of thyme 2 laurel leaves 1/2 tablespoon of saffron 1/2 red bell pepper 2 tablespoons of olive oil Salt and pepper to taste Some

Alicia is a Dominican chef specialized in International and Modernist cuisine. As a food traveler, she visited countries such as Nicaragua, Costa Rica, Panama, Guatemala, Mexico, Colombia, Peru, Cuba, İtalia, Belgium, Spain, France, Greece, the Balkans (Albania, Croatia, Montenegro) and Lebanon to learn their gastronomic secrets.

In the last four years, Alicia has lived in Turkey and traveled the length and breadth of the country in her eagerness to learn about its gastronomic culture.

Graduated as a professional chef from Turkish Culinary Academy, Alicia has worked in this institu- tion for the past three years, teaching Latin American Cuisine. She was owner and Executive Chef on La Mesa del Chef restaurant in Ankara. She has also participated in the gastronomic TV program Taste & Spices that is broadcasted from Turkey to the entire African continent on Natura TV, as well as in several gastronomic events. At this moment Alicia is coordinating online cooking classes in Turkey, Bangladesh and Dominican Repúblic.
