About the Event
Mrs. Alicia SANTANA, Spouse of the UNDP representative warmly invites you to a Molecular and Modernist Culinary Morning.
Alicia Santana is a Dominican chef specialized in world cuisine. She funded her brand, Kika’s Bocadillos, in 1998, and worked for more than 20 years in the catering business in Dominican Republic, Nicaragua, Cuba and Turkey. She has been traveling to Mexico, Costa Rica, Panama, Guatemala, Colombia, Peru, Italy to extend her cooking knowledge.
MODERNIST MENU
Appetizer:
- Beetroot gazpacho with mini cheese sphere
- Tzatziki spheres
- Dehydrated tomato rolls Soup:
• Slow Cooked Broccoli Cream
Vegetables:
• Mediterranean salad
Main dish:
• Sous vide fillet with modernist creamy spinach, carrot and spinach butter and dehydrated mashed potatoes tuile.
Dessert:
• Pumpkin cream brulee
A welcome drink and one cup of tea or coffee is included in this menu
*Only 9 participants will be admitted to the cooking class
