INGREDIENTS  

 

  • 70 gr of dried mushrooms or 150 gr bacon in cubes or 1 zucchini diced  
  • 400 gr. short grain rice (Arborio or Baldo) or whole meal rice 
  • 500 ml red wine (Preferably Teroldego, but it can be Shiraz, Pinot Noir or Lagrein)  
  • Olive oil 
  • 1 large onion, diced 
  • 4 garlic cloves, diced 
  • 1 1⁄2 cup grated Parmesan cheese, plus a little extra to serve 
  • 1 branch of parsley subtly cut,  plus a little extra to serve 
  • Two tablespoons of butter 
  • Salt and pepper at will   

TOOLS:

  • Thick bottom pot 
  • A second pot for the broth
  • Frying pan
  • Grater for the cheese   

Preparation before the class:  

Two liters vegetable broth (Please see recipe and list of ingredients at http://www.kikasbocadillos.com/recipe/vegetable-stock/)
