INGREDIENTS  

     

• 250 gr of dried chickpeas 

• 150 gr dry beans • 1 bunch of fresh coriander 

• 1 bunch of fresh mint 

• 1 bunch of fresh parsley • 1 medium onion • 5 garlic cloves • 1 tablespoon of coriander powder 

• 1 tablespoon of cumin powder 

• 1 teaspoon salt 

• 1 baking soda 

     

For tarator sauce 

• 1/4 cup sesame cream (tahini) 

• 2 garlic cloves • 1 lemon • Salt 

• Water at will 

To serve it 

• 5 units. Pita bread or tortillas • 1 tomato • 1 cucumber • 1/2 lettuce 

• Pickles at will • 1 small bunch of spring onion 

TOOLS:

  • Food processor  
  • Thick bottom pot for frying 
  • Cutting board  
  • Knife 
  • Skimmer  
  • Paper towel to drain excess oil  

Preparation before the class:     

Soak the chickpeas and beans with a teaspoon of baking soda the night before class (at least 16 hours before the class)
